  • Mayonnaise can be used to prepare not only dough for salty, but also for sweet pies. You just need to add more granulated sugar. From this mass you can prepare quick charlottes with apples, berries, and nuts.
  • If products are at different temperatures, it will be difficult for them to mix with each other. Therefore, it is better to take out all the ingredients for the dough on the table in advance. If this fails, then mayonnaise and eggs can be temporarily placed in warm, but not hot, water.
  • It is most convenient to level the layer for pizza or pie made from batter with a dampened hand. The mass will not stick to it as actively.
  • The batter is prepared quickly. But it also keeps well in the refrigerator for up to two days. It’s okay if you didn’t manage to bake pies or pizza right away.

Ingredients

Let's start. To prepare batter for pies, we need the following products:

Salt - half (0.5) teaspoon;

Eggs - two (if very small three) pieces;

Sour cream - 250 grams (homemade if possible);

Mayonnaise - 200 grams (preferably without any flavoring additives, natural);

Flour - 5 - 7 tablespoons (we take regular wheat flour);

Soda - a little less than half a teaspoon

Beat the eggs. Mix sour cream, mayonnaise, soda and salt thoroughly and beat very well. Now let's combine everything and beat again. Then add flour, mix everything well. And the dough is ready.

Comments and nuances

Everything is very simple, but you need to take into account these nuances. First of all, sift the flour, although they say that now there is no need for this, since the flour is clean. We sift flour for other purposes - to make the dough airy! Beat the eggs using a whisk, or use a fork. You can, of course, use a mixer and everything like that, but the effect will not be the same, I checked it personally, I don’t know what the secret is. Add the beaten eggs to the remaining ingredients only when they are beaten until smooth. Another secret: it is better to mix the dough with a wooden spatula or spoon. And personally, my improvement of my grandmother’s recipe. I add a couple of spoons of mineral water to it. After standing for about ten minutes, the dough becomes very fluffy.

Recipe: Pie Dough (Sweet)

We do the same thing, only we add not 0.5 teaspoon of salt, but a little less. Add 1.5 tablespoons of sugar, instead of sour cream you can use kefir, the same amount (that is, 250 grams) - half a half-liter bag. And remove from In this case, you can use almost any sweet filling to your taste.

Batter recipe for sweet pie: subtleties

Kefir (sour cream) and eggs should lie in the room for two hours (so that they are not cold). If you don’t have time, you can hold the bag of kefir under running hot water for a while (or put water in a cup and put the bag there). This will make the dough a little softer. Along with sugar, you can add a couple of spoons of margarine or sunflower oil to the remaining ingredients. Firstly, the dough will be softer, and, secondly, you will get rid of lumps faster. So making pie batter is very easy.

How and for how long to bake?

Don't forget to grease the pan in which you will bake your masterpiece. Preheat the oven to no more than 180-200 degrees. Do not open the oven for the first 10-15 minutes. Baking time depends on the filling of your pie.
