I offer a simple recipe for pancakes with cherries. Their taste is unsurpassed: a moderately sweet pancake-shaped shell, and inside there is a sweet and sour juicy cherry filling. They are very easy to prepare and all the ingredients are available. The most painstaking thing is to remove the pit from the cherry, but if you have a special device, it will take no more than 5 minutes.

Prepare the necessary ingredients.

Pour room temperature water into a mixer bowl and add chicken eggs.

Add salt and sugar. Beat thoroughly with a mixer.

Then add the twice-sifted flour in one portion and beat everything thoroughly again.

All the flour should disperse. The dough will be homogeneous, without lumps.

Heat a frying pan, grease with vegetable oil and pour in a ladle of dough. At the same time, keep the pan slightly raised, making small circular movements so that the dough is evenly distributed over the surface.

Pancakes need to be fried on each side for 1 minute or until lightly golden.

Grease the pan with oil as needed.

Boil water in a saucepan, add and dissolve sugar. Then add starch, stir quickly with a whisk, and dissolve it. Lay out the cherries, having first removed the seeds from them. Boil for 3 minutes and remove from heat, let cool.

Generously spoon the cherry filling into the center of the pancake and wrap it in an envelope or tube. Pancakes with cherries are ready.

  • 1 tbsp. l. Sahara,
  • 1 tbsp. l. rum or cognac;

for cream:

  • 150 g sour cream,
  • 2 tbsp. l. Sahara,
  • 50 ml water,
  • 1 tsp. gelatin,
  • 0.5 packets of vanilla sugar.

Cooking process:

To prepare the pancake batter, mash the eggs, sugar and flour until there are no lumps. Pour in the milk. First, pour in 100 ml and stir. Then, if necessary, add the remaining milk or some of it until the dough reaches the desired consistency (it should not be very thick and flow easily from a spoon). At the end, pour in vegetable oil.


To prevent them from sticking to the frying pan and causing the notorious “pancake to be lumpy,” the frying pan must be well heated with oil. After this, wipe off the remaining oil with a paper napkin and add a teaspoon of fresh oil under the first pancake. When frying other pancakes, no oil is needed.


Remove the pits from the cherries, sprinkle them with sugar and pour in rum. Leave for 2 hours, then drain into a strainer.


Cut thin pancakes into wide strips.


Wrap 3-4 cherries in each strip, folding the strip into a triangle.


If you have rich, thick homemade cream for the cream, you can not use gelatin, but simply beat it with sugar until stable peaks appear.

Liquid sour cream will have to be thickened. To do this, dilute the gelatin with hot water until completely dissolved and whisk together: sugar, sour cream and strained gelatin solution. How to cook pancakes with cherries

In a saucepan, caramelize 80 grams of sugar with 2 tablespoons of water, and then pour 300 ml of wine, add a pinch of cinnamon, the zest of 1 lime and cook for a while until the caramel is completely dissolved.

Dissolve 1 teaspoon potato starch in a little cold water and then stir into the wine mixture until you have a sauce consistency. Add 200 grams of cherries, boil and remove from heat. Remove the cherries from the sauce with a teaspoon.

Prepare the dough from 1 cup flour, 1 cup milk, 2 eggs, 1 teaspoon vanilla sugar and 30 ml vegetable oil, and then fry the pancakes until golden brown on both sides. Remember that pancakes need to be fried in a well-heated frying pan.
