Chinese noodles with chicken and vegetables (Chow mein). Chinese noodles with chicken and vegetables recipe Chinese egg noodles with chicken

Bean (glass) noodles are a traditional product of Asian cuisine, from which all kinds of soups and hot dishes, side dishes and salads are prepared. Bean noodles go well with beef, chicken, vegetables and mushrooms.

Recently, bean noodle dishes have become very popular in our country, probably because the noodles contain valuable fiber for the body, B vitamins and various minerals, are easily digestible and easy to prepare.

Noodles with vegetables are both a filling and tasty dish. Delicious both hot and cold.

To prepare Chinese noodles with vegetables, prepare the necessary ingredients. Wash the vegetables thoroughly.

Peel the onion and cut into thin half rings. Cut sweet peppers and young zucchini into strips. You don't have to cut off the zucchini peel.

Grate the carrots using a Korean carrot grater or cut into thin strips.

Heat the oil in a frying pan and fry the vegetables over low heat for 5-7 minutes. At the end, add the garlic passed through a press.

Pour boiling water over the noodles and leave for 5 minutes. Then drain in a colander.

Add the noodles to the vegetables, pour in the soy sauce and stir. Cook for another 3 minutes. Turn off the heat, cover the pan with a lid and let stand for 10 minutes. If desired, you can add fresh herbs or sesame seeds to the finished dish.

My acquaintance with Chinese cuisine happened a long time ago when I was on a business trip in Singapore.

Of course, I forgot a lot of what was there, but the celebration of the Chinese New Year, as well as Bengali and Chinese cuisine, is quite difficult to forget.

Chinese New Year is something unforgettable! Colorful dragons, processions through the streets, trucks rushing here and there, in which a group of people with red armbands with drums and musical cymbals played incessantly.

Singapore itself amazes with its magnificent performances. This is Sentosa Island, with a bunch of attractions, attractions, including the Underwater World, the Light Fountain and terribly expensive drinks. Impeccable cleanliness, year-round temperature of +35 degrees and an absolute absence of dust and almost daily light rain! And the air, so heavy and saturated with unfamiliar aromas!

I was able to try several different cuisines there. Most of all, of course, I was struck by Bengali and Chinese cuisines. Bengal - with its CRAZY spiciness (imagine, in a small portion bowl with pieces of chicken there were THREE hot peppers! And the hottest ones!).
Chinese cuisine did not impress me at first, because... it is sold in most eateries and, like any fast food, it was very different from the “classic” one. But when we were invited to a Chinese restaurant, it was a completely different matter. First, they brought us live shrimp, which were doused with cognac (so that we could make sure that the shrimp were alive and fresh when they were later taken away for cooking). Then came a series of dishes. These were very small portions of a variety of dishes, but there were more than ten of them (it is noteworthy that liquid and non-liquid dishes alternated completely unpredictably). And when I was already full, they brought us a huge dish with crabs in an original sauce. With beer, which in Singapore is very, very good, the end of the meal was simply magnificent...

But I digress
The philosophy of Chinese cuisine is completely different from European cuisine. I won't go into details, but if you go to a restaurant somewhere in Moscow or your city and order top dishes, you will never get an idea about their food. It is a large number of dishes in small portions, a menu compiled in a certain way according to the canons of Chinese cuisine, that provides balanced nutrition, great pleasure from food and is also therapeutic.

However, I want to present you with one dish that is prepared very simply and very quickly - literally 20 minutes, but the result is simply magnificent and if you suddenly have guests, you will greet them with honor

So, Chinese chicken noodles - in 20 minutes
Of course, this is not quite a classic recipe. I saw this recipe in one of the programs, but changed it a little to my taste. I didn't add sugar because... For me, the sweetness of the pepper is enough and I added wine vinegar, although it is better to add Chinese wine. In addition, ingredients like ginger and hot pepper appear differently in different recipes. Usually hot peppers are taken dried.

Ingredients

chicken breasts 2 pcs
Bell pepper 1 PC
onions (preferably white - with white skin) 1 small head
5 spice mixture 1 tsp
ginger (preferably fresh, cut into strips) 1 tsp
garlic 2 cloves
hot pepper (I just have a small one) 2 centimeters
starch 1 tsp
vinegar 2 tsp
soy sauce 2 tsp
coarse non-iodized salt 1 tsp no slide
noodles (I used Japanese udon) 2 servings
turmeric for noodles (optional) 1 pinch

One of the most common dishes of Chinese cuisine, which is popular in many countries, is noodles with various fillings. On supermarket shelves you can see it with all kinds of sauces and additives.

The best combinations with Chinese noodles are vegetable dressing, beef, chicken, pork, as well as seasonings such as garlic, black allspice and ginger. Boxed noodles are a quick and tasty lunch for a modern city dweller or just a lover of Chinese cuisine. However, a rich, spicy taste and aroma can be achieved by preparing this dish at home. You can buy ready-made noodles: egg, rice, wheat or some other, but there is a proven way to prepare it yourself. You don't need to have any special skills for this. The noodles are boiled similarly to traditional pasta.

Step-by-step video recipe

  2. Boil water, add a little salt and add the prepared noodles.
  3. The average heat treatment time is 7 minutes. If the product is made from rice flour, then the cooking time is reduced by 2 times.
  4. Drain in a colander.

Even a novice cook can handle the cooking process; all that remains is to choose a recipe that will make the noodles a favorite dish for the whole family.

Rice noodle recipe

Noodles with chicken and vegetables in Chinese style is a dish that you can surprise guests with or please yourself during the working day. Many people prefer to cook Chinese rice noodles; their distinctive features are their long length, which symbolizes longevity, and their unusual color (from translucent to rich white).

Before preparing the main components of the dish, if you choose a recipe with vegetables and chicken, you need to properly cook the noodles. If you fry in a wok or thick-walled frying pan, the noodles take longer to process than for Chinese soups. You need to soak it for more than 5 minutes, and quickly fry it before mixing with the rest of the ingredients.

  • Several sweet peppers;
  • Nudels noodles;
  • White cabbage – 300 g;
  • Soy sauce;
  • Breast or fillet – about 300 g;
  • Small squash or zucchini.

A dish with tender fried chicken and vegetables in Chinese can be prepared following the instructions:

  1. Cut all the vegetables on the list into small cubes. To prevent the zucchini from losing its shape during heat treatment, it must be cut into rings of small thickness.
  2. Fry each prepared vegetable in turn until soft. Add olive oil to the pan.
  3. With the chicken you need to do the following: cut into pieces no more than 1 cm thick. Transfer to a deep cup, add a few tablespoons of oil and the same amount of soy sauce. Leave for 20 minutes to soak.
  4. Fry the marinated meat in a frying pan without oil until the crust becomes noticeable.
  5. Sprinkle with sugar and allspice.
  6. Place the vegetables from the frying pan and the chicken into one deep container.
  7. Quickly fry the noodles with a little salt.
  8. Mix all the prepared parts - “noodles + fried vegetables + golden-brown chicken.”

Helpful advice: before soaking rice noodles, it is not recommended to cut them into pieces or break them. It is best to serve the finished dish hot, and the method of consumption - with chopsticks or a fork - is chosen at your discretion.
