Two groups of potato salad recipes from the USA and Germany claim the title of “classic”. These countries have slightly different approaches to preparing this dish. We don’t undertake to determine the winner, but only suggest making both salads and choosing your favorite.

Only potato varieties with a low starch content (sometimes also called “waxy”) that are slightly cooked (culinary types A and B) are suitable. If you choose the wrong variety, the pulp stops in the puree, which spoils not only the aesthetic appearance, but also the taste.

Indeed, the American version of the salad is prepared simply and quickly. It is somewhat reminiscent of a lighter version of Olivier, a favorite among Russians.

Ingredients:

  • potatoes (large) – 3 pieces;
  • chicken eggs - 4 pieces;
  • table vinegar (9%) – 1 tablespoon;
  • mayonnaise – 4 tablespoons;
  • petiole celery - 2 pieces;
  • sugar – 1 tablespoon;
  • salt - half a teaspoon;
  • yellow mustard - half a tablespoon;
  • black pepper - a third of a teaspoon;
  • paprika – 1 pinch (optional);
  • onions – 1 piece (optional);
  • pickles – 2 pieces (optional);
  • red bell pepper – 1 piece (optional).

Attention! According to the traditional recipe, all ingredients should be cut into cubes (recommended width 0.6 cm), no pieces, slices or half rings!

1. Hard boil the eggs and cool to room temperature.

2. Peel the potatoes, boil in water until tender (20-25 minutes). Drain the water and cut the cooled potatoes into cubes.

3. Mix mayonnaise, vinegar, salt, sugar, mustard, black pepper and paprika in a deep bowl. Bring the mixture to a homogeneous consistency by stirring.

4. Cut celery, onions, cucumbers and peppers into cubes.

5. Add potatoes, eggs and other vegetables to the mayonnaise dressing. Mix.

6. Place the finished salad in the refrigerator for 6-12 hours to soak. Serve to the table.

German potato salad (Swabian)

Unlike the American one, German potato salad is a hearty dish based on potatoes with the addition of meat (bacon, sausage) and hot broth. The salad is made using vegetable oil, not mayonnaise. Served as a side dish (addition) to meat dishes and sausages.

Ingredients:

  • potatoes – 2 pieces (large);
  • onion - a quarter;
  • mustard - half a teaspoon;
  • vegetable oil – 3 tablespoons;
  • vinegar (9%) – 1 tablespoon;
  • sausages (ham, bacon) – 100 grams (optional);
  • broth - half a glass;
  • salt, ground black pepper - to taste.

  • 80 g mayonnaise
  • 2 tbsp. l. mustard beans

How to make classic American potato salad:

Wash the potatoes thoroughly and boil them in their skins until tender. Then cool the vegetables completely and peel them. Cut the tubers into large pieces.

We will hard-boil chicken eggs, judge and peel them. Cut the boiled eggs into half rings.

Peel the red onion and cut it into quarter rings. Cut the bell pepper (it is better to use peppers of different colors) into cubes.

In a deep bowl, combine all the ingredients for the salad: boiled potatoes, eggs, red onion and bell pepper. Add a little salt and season everything with ground black pepper to taste.

Now let's prepare the salad dressing, following the recipe for American potato salad. Chop the celery stalk and pickled gherkins as finely as possible. Let's combine them in a small bowl.

Then add low-fat mayonnaise (it can be replaced with yogurt or sour cream) and mustard beans.

Mix the dressing thoroughly until it is homogeneous. Place it in a bowl with potatoes, eggs and vegetables. Gently but thoroughly mix all the ingredients. Cover the bowl with a lid or cling film and put the salad in the refrigerator for at least 6 hours to let it steep.

It is advisable to remove the classic American potato salad from the refrigerator 20-30 minutes before serving. The longer potato salad sits in the refrigerator, the tastier it becomes.

  • Petiole celery
  • Sweet bell pepper
  • Pickled hot peppers
  • Pickled cucumbers
  • Mayonnaise
  • Natural apple cider vinegar
  • Sweet mustard (Dijon type)

Preparation:

Wash about six medium potatoes, boil them in their skins, cool and peel. Hard boil five or six eggs. Wash one or two stalks of celery, peel and wash one pod of sweet pepper. Take three or four pickled cucumbers and one hot pepper from the jar. Cut all the ingredients into cubes (only cubes!) and chop one onion. Note:

In the American version, this salad turns out to be almost liquid due to the large amount of mayonnaise. Therefore, if you are not used to such mayonnaise salads, just add less of it.

Firstly, the difficulty for the practical use of this recipe is the stalked celery. Yes, you can buy this miracle vegetable in most large cities. But not always. But what about those who have never even seen this stalked celery? It can be replaced with chopped stalks (the thicker the stalks, the better) of leaf celery or celery seeds, which are sold as a seasoning.

If you have difficulty finding pickled hot peppers, you can skip them altogether. Instead of regular onions, you can add red onions or green onions to this salad. And sweet American mustard will be replaced by our vigorous mustard, you just need to add just a little bit of it. The salad recipe must contain stalked celery, but since it has a rather specific smell, alas, no one in our family eats it, for this reason I did not add it to the salad. If you like it, then putting about 50-70 grams into the salad will be enough. diced celery stalks.

By the way, the taste of the American one, the step-by-step recipe of which I offer you, is very similar to the Olivier salad, it only lacks canned peas and boiled sausage. So to speak, this American-style salad can be called a more dietary and vegetarian version of the Olivier salad.

Once all the ingredients have been prepared, you can begin preparing the American potato salad. wash it. Boil until tender in their uniforms in lightly salted water. Medium-sized potato tubers will cook over low heat for about 20 minutes. You can check their readiness with a knife. If the tip of the knife tip easily sinks into the pulp, then the potatoes are ready.

When cooking potatoes, it is important that they do not boil over and become watery, and that they are not raw. In both cases, the salad will turn out to be tasteless, so it is advisable to control the process of cooking potatoes and look at their condition from time to time.

Set to cook separately. After cooling, peel the eggs and potatoes. Cut these American salad products into small cubes.

Peel the purple onions. Like the previous ingredients, cut it into small cubes.

Do the same with pickled canned cucumbers.

Place all prepared salad ingredients – potatoes, eggs, and onions – in a bowl. All that remains is to add bell pepper. Wash it, cut it into cubes and put it in a bowl with the rest of the ingredients.

Now you need to prepare a spicy dressing for American potato salad. Pour mayonnaise into a small bowl. Add mustard seeds and a pinch of salt.

Stir the sauce.

To give it a beautiful rich yellow color, add a pinch of turmeric.
