So, to make yeast dough with water, I heat the water until warm, about 40 degrees, maybe a couple of degrees lower. If you don’t have a thermometer, then it should feel warm and under no circumstances hot, otherwise you will simply ruin the yeast. Next, I add salt, sugar and fresh pressed yeast. It is important that they are really fresh and in no case expired.

I stir everything well and add olive oil. Next I add flour, but only 100 grams and mix it in with a spatula. Then I add another 100 grams and mix again. And so on until I have added all the required amount.

It is more convenient to knead with a spatula at first, and then do it with your hand. The result is an elastic ball of dough, which I transfer to a wooden board greased with olive oil. I cover it with a clean kitchen towel and leave it to rise in a warm place. Since it’s winter now, I put it on a table with a warm radiator under it, so the process happens faster. The dough should increase 2 - 3 times, this will take about an hour.
